Libero is our finest condiment, named in memory of grandfather Libero Ferretti.
It is obtained by ageing the vinegar for decades, transferring it yearly between small barrels of different quality woods.
Given the particularly intense flavour, it should be used in small doses only, and is the perfect accompaniment to pot roasts, game and red meats.
Another excellent, traditional pairing is with slivers of Parmigiano Reggiano, and it is delicious served as an after-dinner liqueur.
Ingredients: 100% cooked must. No preservatives, thickening agents, caramel or added sulphites.
